Although not exclusively mountain fruit (as there is some fruit from the St. Helena region of Napa Valley), this Cabernet Sauvignon exhibits dark fruits in the nose and a sweet tannic structure upfront on the palate. At first sight, the vibrant purple hue is noticed with notes of black pepper, spice, and anise in the nose. As the glass is swirled, darker fruits and black currant flavors are released. Subtle hints of pepper carry through the mid-palate into the finish where the tannins begin to take over, giving the wine a complex structure. One experiences multiple layers of fruit and earth before diving into the dark long finish, which lingers in the mouth. Our 2011 Cabernet Sauvignon is a wine to be enjoyed by people who prefer bold Cabernets, as well as for someone who isn’t afraid to put it away in the cellar for a few years.

This is a classic style of Cabernet that should improve with age. It smells like pencil shavings, tobacco and cedar, and tastes like dark chocolate and black cherry, while feeling very firm on the palate. It has fine-grained tannins, and a lingering dark chocolate and cherry finish. It will be best after 2018.
